Awaken The Senses with Better Beans & Better Coffee

March 22, 2017

Now we all know that many of us like to savour a good quality coffee during the day. What if your coffee was served in a machine that epitomised Italian style, performance, design and chic? Santosha has a reconditioned Faema E61, which was rebuilt by our very own multi-skilled Master of Ceremonies, Eran Gindi. The E61 dates back to 1961 and immediately became a performance and style icon, thanks to its innovative technical solutions, its pure steel body work and elegant-design back-illuminated glass. The E61 is the first machine to use a volumetric pump to give the water the ideal 9-atmosphere pressure and keep the pressure constant during the whole extraction process, unlike lever machines. Furthermore, thanks to the preinfusion system, the extension of the contact time between the water and the ground coffee before extraction favours optimal extraction when it comes to our senses. The Faema company itself dates back to when Carlo Ernesto Valente opened a coffee machine factory in 1945, in Milan: the "Factory Electro Mechanical and Associated Equipment" ("Fabbrica Apparecchiature Meccaniche e Affini” ).

For the perfect coffee machine you need the perfect coffee and Santosha are delighted to serve single origin, Fair Trade, quality organic coffee. At the moment we are using local roasters Arabay, as this is the season for their Nicaraguan beans. The coffeas are cultivated at a height of between 1300 – 1450m and these fully washed beans offer a variety of Bourbon, Caturra and Catuai with subtle hints of chocolate, fruit such as apricot and earthy aromatic herbs. Ideal with lunch or as a postprandial delight. Also, a single origin decaf is available from Peru.

One more advantage in making a great coffee is using fresh local whole milk, sometimes organic when available or a vegan option. We also offer oat, soy or rice milk.
